Toscano Salsa Verde (Green Sauce)

 

Just because the weather during the winter months are cold doesn’t mean you always want to light up the stove.  This quick little sauce can be prepared and keep on the ready for a quick delicious meal or condiment. Here in Tuscany people eat very well.

 

Ingredients

 

100 grams Parsley

200 grams Extra Virgin Olive Oil (flexible to how thick you want the sauce to be)

40 grams Capers

50 grams Anchovies

1 clove Garlic

TT Sea Salt

Zest Lemon

 

Directions

 

Add all ingredients to food processor or blender. Start blender/food processor while slowly drizzling in the olive oil.


Serve immediately over pasta, fish, meat, bread.  Be creative!
