The bubbles in Persecco can vary between refined to the larger bubbles of the spumante style.  The sugar levels in Persecco progress from Extra Dry (sweetest) to Brut (driest).

Persecco gets its name from not only the grape use to make this style of sparkling wine but also its region of origin in Veneto, Italy.   Persecco unlike champagne does not go through a second fermentation.  As a result, Persecco tends to be more fresh and fruity whereas champagne tends to be more crisp.
