Cambellini al Vino

 

These crisp little cookies are not only made with wine but are best consumed with a glass of whatever wine you made it with.  They are fun to eat while not overly sweet. If you are vegan then these are the cookies for you as they are made without eggs or butter.

 

Ingredients

 

500g Flour (all purpose)

1 C Olive oil

100g of Sugar

1 C Wine (red or white)

 

Directions

On a clean surface sift the flour and  sugar into a pile.  Create a well in the middle of the flour/sugar mixture.

Pour the wine and oil in the center of the well.

Using a fork slow incorporate the flour in the oil and wine until everything is incorporated.

Gently knead the dough until shiny. This takes approximately 20-30 minutes.  Try not to overwork the dough.

Preheat the oven to 400 degrees fahrenheit.

Divide the dough into four balls.  Take about approximately ½ oz dough.  Roll the dough into a snake shape until about ⅛ inches thick.

Fold dough into a circle.

Sprinkle the circle with sugar and a place on a baking sheet lined with parchment paper.

Repeat until the baking sheet is full.  This dough doesn’t spread so you can place the cookies fairly close together but not too close.

Bake cookies for 10-15 minutes or until golden or rosy in color depending on what wine you use.

Let cool and enjoy with a nice glass of wine!
