Calamari with Thai Sweet Chili Sauce, Basil and Meyer Lemon

 

This dish is not only quick and easy but it can be a great started or served on a bed of noodles or sticky rice to be served as a main entree.

 

Ingredients

 

400g of Calamari (cleaned and cut into rings)

1/2 C diced Zucchini

1/4 C diced Celery

1/4 C diced Onion

1 Tbs Sweet Chili Sauce

1 Tbs julienne Basil

2 tbs of Lemon juice

4 slices of Myer Lemon

1-2 Tbs peanut oil (or a similar neutral flavored oil)

 

Directions

 

Place a medium sized sauce pan on high heat.  Add the oil to the pan. Make sure the oil is hot enough to glisten in the pan.  First add the onion stirring constanly till translucent. Then add celery stir for about one minute. Then add the zucchini stir until the zucchini soften slightly before adding the lemon juice to deglaze the pan.  Then add chili sauce. 

 

Finally add the calamari continuing to stir the content of the pan until the calamari is cooked. Calamari cooks vey quickly maybe within a 1-2 mintues.  Calamari should be slightly firm but not hard and rubbery.

 

Serve immediately sprinkling each plate with basil a slice of lemon.
