Mint Cilantro Parsley Pesto

 

what gives this pesto its unami punch is the mint.  The mint doesn't overwhelm the other flavors in the pesto.  Instead the mint makes the pesto refreshingly light.

 

Ingredients:

 

1 cup Parsley, lightly packed

1/4 cup Italian Cilantro, lightly packed

1/4 cup Mint, lightly packed

1/2 cup  Roasted Shelled Pistachios

1 cloves Garlic

1 oz.   Parmesan Cheese

2 Tbsp Lemon Juice

1 Tsp lemon Zest

3/4 cup Extra Virgin Olive Oil

1/8 tsp Salt

TT Fresh Cracked Pepper

 

 

Directions

 

Puree ingredients until desired consistency is reached.  Use immediately or store for up to 3 weeks.
